1.虱目魚、醃瓜用水沖洗乾淨備用 (口味較清淡,可以讓醃瓜泡水5分鐘)
2.鍋中倒入食用油,油熱後放入薑絲、蒜仁干煸。
3.放入醃瓜、醬油、水 (水量至少需可淹虱目魚的一半)
4.煮滾3分鐘充分釋放味道,再加入虱目魚。
5.倒入米酒,蓋上鍋蓋關中小火悶煮
6.煮至虱目魚熟透入味即可
7.撒上香油、蔥花即可起鍋
