Description

份量:約3 - 4人份

烹飪小教室:

1.起鍋,倒入食用油,油熱後加入花椒粒炒出花椒香味後,撈出備用(鍋子與油稍後繼續使用)

2.另起一鍋水放入炒過的花椒,再加入鴨血以中小火煮15分鐘。

3.原油鍋,加入薑片、蔥段、大辣椒、黑胡椒粒翻炒,再加入辣豆瓣醬、糖、醬油繼續翻炒,煮至大滾。

4.倒入水、米酒大腸、鴨血,蓋上鍋蓋中小火悶煮10分鐘(可以先試試鴨血是否入味)。

5.加入烏醋、大蒜,滾1分鐘,加入太白粉水(邊加入邊攪拌),讓湯汁勾出薄芡。

6.加入蔥花即可起鍋。
