Description

份量:約3 - 4人份

 

烹飪小教室:

*烹飪前準備:取一碗將糯米洗淨,浸泡1.5小時後,撈出備用。

*烹飪前準備:將香菇、乾蝦仁、蚵乾洗淨後泡軟,浸泡的水留下備用。

*烹飪前準備:將醬油、烏醋倒入一碗中備用。

1.起鍋,倒入食用油,油熱後加入薑末爆香。

2.依序加入香菇、蝦仁、蚵乾五花肉絲拌炒至豬肉變色

3.加入糯米、米酒、麻油拌炒均勻。

4.加入醬油烏醋、油蔥酥、鹽巴、500cc水(含浸泡香菇、蝦仁、蚵乾水,需確認水有蓋過糯米)。

5.轉大火拌炒至水滾,水滾後蓋上鍋蓋,以中火燜煮。

6.燜煮2分鐘後,轉小火掀蓋拌炒3分鐘增加米飯Q度,再蓋上繼續燜煮(此步驟重複三次

7.最後一次拌炒後,即可起鍋。

Ps.喜歡吃Q一點的鮮粉可以放涼再食用。
