Description

份量:約4-6人份

烹飪小教室:

烹飪前請先將鴨肉用熱水川燙約3-5分鐘後,撈出備用

1.起鍋,倒入食用油轉中火,油熱後加入薑片爆香至薑片呈現微捲曲狀(5-10分鐘,過程中需稍微翻動避免焦掉
2.
加入鴨肉、胡椒粉拌炒,拌炒至鴨肉表面
稍有焦色
3.
倒入約100cc的米酒後快速翻炒約30秒,再將剩餘的米酒及麻油全數加入。
4.
加入中藥材、水(600c.c),並蓋上鍋蓋轉大火煮滾。
5.
水滾後依個人口味加入鹽巴調味,並繼續悶煮約20分鐘或40分鐘(前者較有嚼勁,後者較軟
6.
菜盤可於悶煮後加入煮熟即可!
