Description

份量:約3 - 4人份


烹飪小教室:

※乾香菇、乾蝦仁洗淨,泡水備用(水需留著),米粉分別洗淨泡水備用。

※將蒜苗稍微分成:蒜白、蒜綠。

1.熱鍋倒入食用油,加入芋頭以中火煎至兩面金黃色(約5-8分鐘),撈出備用

2.原鍋轉中火加入香菇拌炒至香味散出,再依序倒入五花肉、乾蝦仁、紅蘿蔔絲、胡椒粉拌炒。

3.最後再倒入蒜白、一半油蔥酥拌炒幾下後起鍋備用

4.原鍋倒入2200cc 水(含香菇水)煮滾,水滾後轉中火加入芋頭燜煮15分鐘。

5.將步驟三起鍋的乾料倒入鍋中,煮滾後開中火倒入米粉、米酒、香油、鹽巴(建議倒入2包,若口味清淡者可先倒入一包再依口味調整)。

6.沿鍋邊嗆入烏醋,加入芹菜末、剩餘蒜苗、油蔥酥即可起鍋。
