烹飪小教室:
1.將【5g鹽】及苦瓜一起放進大容器內做醃製去苦味的動作
2.鹹鴨蛋剝殼後用湯匙將蛋黃蛋白分開蛋白的部分捏成末
3.苦瓜醃製數分鐘後,起滾水鍋水滾後下苦瓜川燙2-3分鐘後撈起
4.鍋中倒入食用油,油熱後加入鹹蛋黃壓炒至起泡
5.蛋黃充分起泡後下苦瓜翻炒,讓苦瓜充分包裹著蛋黃
6.加入蒜末翻炒,再下糖調整味道
7.最後下辣椒、鹹鴨蛋白與蔥花,起鍋前灑進鹽(可依個人口味調整)及胡椒粉拌勻即可

餐點需加熱烹調後才能食用,切勿生食。
